​Fairbanks Ptarmigan en Casserole
2 ptarmigan (about 1 1/4 lbs. each) dressed

5 tbsp.  butter 

peel of 1/2 orange

peel of 1/2 lemon

1 doz. Juniper berries

1/2 cup white wine

2 tbsp. burnt brandy
Sear birds in 3 tbsp. butter turning constantly until golden brown-about 20 minutes. Then place in casserole with butter from frying pan, adding 2 tbsp. more melted butter, orange and lemon peel, and juniper berries. Sprinkle with wine and cook in a slow oven 15 minutes. Basting lightly. Just before serving, lift the ptarmigan out of the casserole and put a little burnt brandy on top of the birds. Covers with the gravy yield, 2 to 4 portions.
